Issue 9:Regarding the Issue of "Whiteness" and "Transparency" of Cassava Starch Paste

The "whiteness" of cassava starch refers to its reflectivity to 457nm blue light. Simply put, it is the apparent whiteness of starch powder on the surface, which is one of the important indicators of starch and has national standards and testing methods.

The "transparency" of the paste refers to the transparency of the paste after the starch is completely gelatinized in water (usually measured at a paste concentration of 6%). Currently, the country has not formulated relevant indicators and measurement methods for cassava starch paste.

Due to the influence of production materials, equipment, and processes, a high apparent whiteness of starch does not necessarily mean good transparency of its paste.
